Friday night is pizza night at the Mercantile.
Your pizza can be picked up or eaten in house between 3 pm and 8 pm. Most people choose call ahead to have their pizza freshly baked and waiting for them at a specific time. But if you prefer to take your pizza home unbaked, please request the special pizza container that allows you to bake your pizza in it . Try 400 degrees F. for 12 minutes plus or minus a few minutes. Even better, take it out of the container and bake it on a piping hot pizza stone, like we do in our kitchen.
Your pizza started life on Wednesday. First, the starter for the dough is prepared and gently rises overnight . The next day more ingredients are added and the dough rises again. The third day, Friday, the dough is portioned out for each 12 inch crust.
